For the rice kheer: it’s a basic kheer made with rice, whole milk, sugar and flavored with Indian butterscotch essence. The most important ingredient here is the Indian butterscotch essence since that’s what will give it that unique flavor. Do not substitute with American butterscotch essence.

Before you start, soak the basmati rice in water for 15 to 20 minutes. Then drain the water using a colander and set it aside. Then remove the beans and pastry and cook for an extra 5 minutes. The Pastry should be Golden Brown. Chop the cashews before you start making the praline. Add sugar to a wide pan on medium-low heat. Don’t stir it, at first the sugar will get clumpy. A traditional butterscotch sauce recipe requires only three main ingredients: brown sugar, butter, and heavy cream. That’s it! We also add in a little vanilla and salt to boost the flavor.Flattening your pastry into a disc before refrigerating will chill it faster. (Due to the larger surface area.) These are so easy too! You don’t have to faff around making pastry, so even a novice baker can get involved with this recipe. Simply use a sieve to push the sauce through the lumps. Making own or using store-bought Pastry case for a tart? Cover without letting anything touch the sauce (we use a microwave splash cover) Place in the fridge to set, for about 3 hours.

To summarize: Butterscotch sauce is made with brown sugar, while a traditional caramel sauce is made with white sugar. Then you can begin to bake blind. (using beans or whatever you like above grease proof or oven safe parchment paper!). If you do make your own, make it before you make the sauce, as the sauce needs to be poured in whilst it is warm! You may adjust the sugar to taste. The quantity I have shared works for me but if you want to reduce the sweetness of the base kheer to balance out the sweetness from the praline and sauce, you can reduce it to 1 to 2 tablespoons. It’s up to you.

Do not use American butterscotch essence if you want that Indian flavor of butterscotch in this kheer. You can find Indian butterscotch essence at Indian grocery stores or online. You can however replace it with vanilla essence if you absolutely want to make it but don’t have or can’t find the essence. Simply melt the butter with 30ml milk on low heat (I use whole milk but any will work) pour in soft light brown sugar, and stir , watch as it marbles together into a caramel colour. In the early days of making this, I made the mistake of not stiring the flour in with the milk, which made a lumpy Butterscotch sauce.... please if this happens to you do not give up!! Place the lined bun tray in the preheated oven for about 5 minutes until the tart cases are lightly golden.

To make the tart cases: cut out 12 x 8cm rounds from the tortilla wraps using a plain round 8 cm cutter. If you don't have a cutter, you can use a round 8cm glass and cut around it using a small sharp knife.
