That day I was trying to get a shot of Dozer jumping into the pool for the cookbook and he refused to get his locks wet. So if deep frying I would try and season after you cook but other methods I don't have a problem with seasoning before you cook them. While the curry powder is optional, I highly recommend it as it adds an earthy flavour and just the right amount of spicyness to the seasoning. I recommend making the spice mix in small batches that you can easily use up, as opposed to one large batch. Coat chips/wedges in olive oil, sprinkle over our spices before baking in oven for the ultimate golden and crispy chips.
