David Gin is a true work of art both in spirit and in form, which is bottled in a replica of the head from Michelangelo’s statue of David. For all these reasons, David Gin is not your “usual gin” but a finest-quality spirit. In Lincolnshire we are now benefitting greatly from the small gin surge, and Louth locals Alan and Amy have led the way. A conversation on a car ride in 2016 set them on a much bigger journey that would see them open Lincolnshire’s first distillery. It was the perfect place to make their dream happen, as there were no commercial distillers in Lincolnshire at the time.

The clarity of David Gin recalls limpid Tuscan springs and its fragrance of select herbs and spices such as iris root, juniper, coriander, anise and sweet orange are jealously held in its alcoholic soul, to be sipped neat or, at most, with a few cubes of ice. The wine alcohol and the botanicals that characterize it are distilled and extracted individually, to then be combined in a top-of-the-range product, pure to the eye and richly layered on the palate. Pot distilled gin – This is the traditional way of making gin.fermented grain mash from barley or other grains are fermented in a pot which brings out its natural alcohol. It is also mixed with aromatic compound extracts. The taste of this gin is quite similar to vodka.

The still is charged with wheat neutral spirit, water and then the six botanicals carefully weighed and tipped into the still where they are left to infuse in the alcohol (at around 60% alc./vol.) for a 16-hour steeping period, usually overnight. All the botanicals are distilled together, according to the traditional London dry method. This is crucial as distilling together (rather than separately and then blending) allows the botanicals' essential oils to interact during distillation. We tried the original along with Valencian Orange, Premium Pink and Navy Strength. It seemed everyone in our tasting group had a different favourite! Mine was the Premium Pink, which had a sweet fruity aroma with a spicy and citrusy twist in the flavour. Thomas Dakin gin has been recognised for its quality at many awards ceremonies including the Best British London Dry Gin in The Gin Masters 2018, a global competition judged by industry experts, and Best Gin in the prestigious The Grocer Drink Awards, the only competition to be judged by a mix of consumers and industry experts.

The great thing about gin is it can be stored for years without going off, but it’s recommended to drink it within two years of opening. Even if you tightly reseal it, it’ll likely lose taste and quality if you leave it any longer. What are the different types of gin? The long bar room is perched on a floor above the distillery, and you can look down onto the maze of tanks and pipes through tall glass windows. Some tables are fitted with miniature stills (distilling contraptions) for gin schools, while others are laid out neatly with glasses ready for tastings. This spirit flows from the condenser into the glass dome covered eprouvette which enables the distiller to monitor the spirit run to assess when to make the all-important cuts from heads to heart and from heart to tails. Even the gin tanks at Louth Distillery are part of the family. There are four copper pot stills – Dotty, Rose, Stansfield, and finally Molly, who is the largest of the lot.
